I recently decided to finally go ahead and start a project 365, where I take a picture a day for a year. So, I started it on June 2, 2011 and if all goes well will be finishing it on June 2, 2012.
I am so excited to be able to look back and see an entire year through photos. This isn't really new to me as I take photos everyday anyway, but making sure it happens and edited and then posted is another thing, ;-)

Some photos will be taken via cell phone (as sometimes all you got is this little device, yes?) but, my favorites and best quality photos will come, i'm sure, from my dslr. I am somewhat obsessively attached to my nikon (someday though, I will save up enough pennies for my canon eos 5d mark II, though) . ;-) Being so close to my camera means it is literally hanging from my neck most days, and I'm okay with this attachment. ;-)

Anyone else doing a 365 photo project?

Anywhoo...check out this slideshow and if you are on flickr let me know...would love to see your photos, too! ;-)

Photography is my most favorite outlet for creativity. I am wanting to grow and learn as much as I can about the art.

Chemical vs. Barrier Sunscreens...

Hello all!!

So....it is summer time. YAY!!

My family and I pretty much live outside this time of year either at the beach or by the pool.

We also LOVE getting our healhty doses of vitamin D from the sun!

But...we do have to be safe about too much sun. Sunburns are bad. I, for one come from a family who has a history with skin cancer. Definitely no fun, either!

So...I have to be careful that my family and I keep our skin protected.

Like I said we spend a great deal of time at the beach or the pool...

Lately our natural (chemical free) sunscreen just hasn't been cutting it. Not cool. Everywhere I turn it seems I see people slathering chemical sunscreen on their kids (and the kids are not getting burned like ours), and even my sweet hubby is starting to think that maybe we need to switch to a "less healthy one". Oh, don't misunderstand me...I'm not saying that I think those parents are bad in any way for choosing to use those sunscreens..not at all am what i saying that. What I am saying is is that I have done a great deal of research (after someone I know mentioned something about chemical vs.barrier sunscreens) and I personally have made the choice not to use them for my family. I am simply noticing what others are using and also noticing that my kids are more pink then they should be, in my opinion.

The natural brand we are currently using needs reapplied after EVERY time the kids get the water. Practical? No.

So...I am looking else where and am not going to throw in the natural sunscreen towel just yet (in fact, I'v got two more brands I'm going to be trying out this week and they can be found at Target..yeah, right down the road from us). I will let you know what brands those are and what I think about them on a different post.

I came across this website that I have found to be very informative. Please check it out and let me know what you think!

I am also consulting friends on this matter and getting their recommendations on natural sunscreens...obviously, I am looking for one that does have some lasting power in water. I also understand the importance of wearing proper clothing, shade, and times of day I have my kids in the sun (all important factors).

Anyone else do any research on chemical vs. barrier sunscreens? Google it. So much info that was shocking to me at first, but it makes so much sense when I really started thinking about it.

Also...any recommendations on your favorite sunscreens? I'm all ears...

Tropical Traditions Virgin Coconut Oil Hair Treatment {Review}

I have mentioned before that I love all natural hair treatments...So natural, in fact, that I use the no-poo method for cleaning my hair (which I love, btw)...I also use apple cider vinegar for a conditioning rinse and if needed I love a smidge of shea butter...and my new personal favorite...

I have reviewed Tropical Tradtions products in the past and was delighted to be able to try this product. It did not disappoint! My hair is happy!!

Tropical Traditions Gold Label Standard Virgin Coconut Oil Hair Treament is fabulous!!

This coconut oil was specifically created to be used as a hair treament, in fact, it has a good deal of protein in it and is super nice on the hair. I, for one, tend to have dry hair and this has been so helpful!

My favorite way to use this is to put a touch of it in the palms of my hands, rub my hands together and then apply it to my hair after I get out of the shower. It makes my hair so smooth, and helps tame my (by nature wild) mane.

I have noticed an increase in the amount of shine in my hair since using this product. Yay! That is something that is somewhat difficult for me to obtain, so I am thankful!

I also have reaped the benefits from smothering my hair in it, wrapping it up for about 30 minutes, and then washing it out. Lovely softness!

Plus, I love the coconutty smell...like a day at the beach. (Well, thankfully since we live at the beach for the next three months this happens often, but you know what I mean).

Oh...and another thing that I love about this product is that a little goes along way. Really, one bottle would last for quite awhile, which makes me smile!

So...I totally recommend this product!

This is just one way that I incorporate natural products as a way of "beautifying" myself. I am so happy not to be smothering myself in chemicals..I've been there, done that..and I prefer it more natural. See this post I did not too long ago on just how many chemicals lurk in unsuspecting products..

Hello Spring!

Happy Springtime all!!

I hope you all are enjoying the beautiful weather! Spring just draws us outside..we love it! We just want to get outside and soak up the sun and the Springtime!! I love Springtime!! The kids do not like to sit around the house for too long...I don't blame them, neither do I.

Being outside of the house means...I have also fallen a bit behind on this blog and will be playing catch up little by little...lots of fun things to come, be assured! ;-)

Now...those who read my little blog know that I never claim to blog everyday...Even the thought or feeling like I "had" to everyday would honestly drive me crazy. I mean, I love blogging..but I could never be a professional blogger. ;-) Love the blog, but can't let it tie me down. I guess you could say I have issues with commitment. (Don't worry, sweet hubby...that's only with the blog). ;-)

I also blog over at my little itty bitty family blog, and for obvious reasons that takes top priority!

I'm going to let you know a little secret about me...ready?

I love straws. I do. Love them. Okay, secret is out. And no.. I never said it would be a juicy secret. ;-)

I love how fancier a beverage becomes when sipped through a straw. Ice tea in a handled mason jar becomes so much more classy when coupled with the right straw, come on...wouldn't you agree? ;-)

Up until recently I have used only plastic straws. Yes, I said it...plastic.

I was given the privilege of test "driving" okay...let's say test "sipping" on glass awesomeness from Strawesome! Yep, I have been wanting to wrap my lips around a glass straw for quite some time now, and finally I got to try one and I must say...it is awesome!!!

{The Review}

I really do love this straw...it is pretty with the unique dots and swirls (come on, that's a huge plus). I've never sipped through a pretty straw before. (It's the simple things, you know).

Not only is it pretty to the eyes. but it is so much healthier than using plastic straws...who wants to expose themselves and their family to even more plastic toxins? Not me. I, for one, am trying to greatly reduce the amount of plastic I use...and, this straw helps me to make one more leap towards going plastic free. I say "yay" to that!

I chose to try the bent straw...and I like it since I seem to gravitate towards bent straws for some odd reason. But, I do believe that my next straw won't be bent...my excuse to get another glass straw ;-).

I also love that I can take, even a small part, in helping the environment. I mean, seriously, there is too much waste as it is in the world...I love to be taking a step towards less waste and trash. Sounds like a plan, to me.

I love how there is zero plastic taste (well, being that it is glass, this is a given) but this makes me happy. I like how there is no taste other than what I am sipping through the straws. The taste of iced yerba mate teas, sweetened with some liquid stevia, or a delicious green smoothies are all I taste through the straw (just to name a couple drinks I have put the glass goodness straw to use on...plain and simple. I like that.

It washes clean. They even make little straw cleaners, that I think would be good to have around (they are quite inexpensive to boot).

I have yet to put it in the dishwasher, but will be trying that soon. I, generally, just hand wash dishes since we only brought a limited amount with us to Gulf Shores. But, I would feel like it would be completely strong enough to withstand the dishwasher as the glass is annealed (slowly cooled to make them stronger and less brittle). I love how it is a practical, for everyday life kind of straw.

So, to sum things up..I really like this straw. No, I take it back..I LOVE this straw! I want more, honestly. I want to order at least three more. One for the Hubster, and one each for the offspring. My kids, especially, have been gawking over my straw. The Hubster is digging it, too...it's just he's so much more reserved about expressing his desires to make certain items his own. (I do believe that he wants this straw, though as I can see it in his eyes) ;-) So, there you have it.. I can't keep this kind of goody to just myself for long..I will have to buy them their own special glass straw soon.

Oh, and I also believe having an extra one kept in my purse would be rad, too..they make little cases for easy carry. I like to drink through straws on the go, too..and now that I have converted over to glass straws... this would be perfect!

Beauty can Bite

I came across this earlier today and thought it was important to share...

I, for one, never use to spend much time thinking about what I put on my skin. I thought, "hey, it's got to be safe, otherwise the makers of the make-up, lotions, etc couldn't sell it." WRONG! This couldn't be further from the truth.

One day, can't remember the exact day...sorry. ;-) I learned about the dangers lurking in those "harmless products."

When I discovered a toxic ingredient in a product and then proceeded to research more on that particular ingredient I was shocked..uh, gross!! This was the case for any toxin I just happened to come across..each one was eye opening.

Oh, how I wish I had been educated on this sooner. But, alas...since I can't go back and I can only look forward and choose to make better choices.. that is what I will do.

The skin is the body's largest organ, did you know that? I didn't know that for the longest time. Makes sense that what we put on our skin should be just as important as what we eat, as what we put on the outside will eventually be absorbed into our bodies through our pores and into our bloodstream and cells...

Oh...just the thought of all of the sunless tanner I used to cover my fair and freckly skin with turns my stomach. (not even mentioning the make-up,etc) Live and learn...I have learned.

I am learning day by day new things...things I did not know about years ago. It is interesting to see how much I have changed as the years go by. I am trying to rid my system of toxins that I have bombarded my system with throughout the years...in doing so I have done some changing of my ways when it comes to make-up and products I use on my skin.

My rule is pretty simple..and I try to live by this as much as I can (though I am not perfect): don't put it on my skin unless I'd want to eat it, too.

So...what do I currently use?

Here are somethings I like to use on my skin and hair...

Make-up: Currently in the process of switching from Bare Minerals (as it isn't as healthy as I once thought). So, I'm still in research mode for the mineral make-up scene. Anyone use any mineral make-up that they love and would be interested in recommending to me?

Now...granted I wouldn't want to "eat" mineral make-up, but I think you get my drift. ;-)

Lotions: raw, unrefined shea butter as well, as yep you guessed it...extra virgin coconut oil.

Shampoo/conditioning rinse: Baking Soda and Apple Cider Vinegar (I love the no-poo method). It works beautifully and my hair is very clean...and talk about inexpensive!!

Leave- in hair conditioners: (used when needed) raw unrefined shea butter, extra virgin coconut oil, extra virgin olive oil.

Facial Masks: something I am currently experimenting with. Will update this when I find something I really like.

Anyone else have any natural body care products you like? Any homemade natural body care recipes you'd like to share? I'd be so thankful. ;-)

Exercise as of Lately..

Hello all!!! Long time no post... ;-)

I love group fitness...oh how I love it! I love everything about it: from the friendships made within the classes, knowing that you and everyone else in the class are working hard and towards a variety of goals, to the motivation that comes from being in a group fitness class.

I used to teach aerobics classes, and look forward to getting back into that. Until then I enjoy being a part of a class. It truly keeps me going.

Now, don't get me wrong...I am self motivated when it comes to exercise. If I miss too many days I feel it..whether it be my mood, sleeping habits, so on..I feel it. And it isn't pretty. I can get pretty irritable without my exercise. An unexercised Kelly, is a moody Kelly. ;-)

I, currently, do not belong to a gym...so, sadly, no group fitness classes for me *tear*, but that's okay...lately, I have been well, kind of tired and exhausted (read why here soon) but what I do have available to me in the apartment complex where we are staying at for awhile, is a pretty nifty fitness center with cardio machines and weight machines. I like the cardio machines, especially when it is too cold to exercise outside. I am personally more of a free weights fan, myself. We brought those with us...so, I can leave the weight machines to the other users...granted at 5:30 in the morning there is not a large number of people working out with me, anyhow.

An issue I have encountered lately, which is sadly causing a decline in my exercise level, is low iron. Yep, the dreaded anemia strikes again. Once a month I get hit by the iron sucking period. Period. Oh, okay...some of you may not want to hear this. Sorry. Close eyes now if need be...the flow is pretty heavy. Not sure why..I'm pretty sure it has something to do with the fact that I have had children, as my period does increase with each child..thankfully I only have two, and thus am still alive. ;-)

So...I have been drinking liquid chlorophyll (doesn't get much greener than that, folks) as often as I can to help with anemia. Anyone else try this method? Meanwhile...while I am zapped of energy, I am also bummed...bummed that I do not have the energy to exercise like I would like to. In addition to the liquid chlorophyll I have been trying to drink green smoothies daily (love).

Oh, one other thing I will try to help with the anemia is ulsulphured blackstrap molasses. It is quite nutritious. I have also heard that it helps with gray hair,too (I believe that is due to the copper it contains). This would be a nice bonus....help with those pesky random grays and an anemia treatment..I'd take it. ;-) Any of you use blackstrap molasses for any of those reasons?

When I bounce back, which I am faithful I will...I will resume:
-running, lots more weight training, and a serious ab routine (oh, I love ab workouts!!!, really!)

Also...will be doing lots more workouts with Zuzana over at http://www.bodyrock.tv/. She has amazing workouts, which I love!

And...last but certainly not least..If I can manage to get a copy of the Beach Body's P90X exercise dvd's I will get to work on those, too. When I taught fitness classes in the past I incorporated many of the routines from this awesome program into my class. We saw amazing results! At that point, I had borrowed the program from a friend...it's due time to own it myself, don't you think? ;-)

So...that is what I have been up to exercise wise. I can't wait to get back into the swing of things with exercise. I miss it, but when my anemia is pretty bad I have to be careful with how much exercise I do. I tend to over exercise anyway so, this sort of helps balance me out, I suppose. ;-)

Wilderness Family Naturals

Hello All! How has life been treating you? I hope wonderfully...

Speaking of wonderful..allow me introduce you to some products I was recently able to sample and review. Wilderness Family Naturals sent me a package with some goodies in it to try.

Let's just say it was coconut heaven.

First off we have their Extra Virgin Centrifuged Coconut Oil.

My Review: This coconut oil is amazing!! A friend had told me a while back just how rich the taste of coconut is in this coconut oil. After trying this one I agree with her 100%. The taste is wonderfully coconutty.

Next up we have their Coconut Spread.

My Review: This spread is mouthwatering delicious! So far, my favorite way to eat this is on toast or with just a spoon. I love how it is raw and certified organic and that it does not contain nasty colors or preservatives.

Then there's the Coco-Loco Spread..

Sorry..this picture is a bit on the crooked side. ;-)

My Review: What is not to love about a tasty combination of coconut and chocolate? This is a delicious spread that kept my spoon coming back for more..okay, it had me coming back for more. ;-) This spread is also raw, certified organic, and free from extras like preservatives.

Last, but certainly not least is the Mango-Tango Spread..

My Review: The Mango-Tango is my kids favorite!!! It is a wonderful, tasty combo of coconuts and mango. Each bite had me feeling like I was on a tropical island....I kid you not. I did have to close my eyes for this feeling to occur,though (I mean it is Winter time, after all). ;-) My kids referred to it as a "treat". It certainly was.

This spread is also raw and certified organic, and you won't find any artificial colors or preservatives in this, which makes this mama happy.

Wilderness Family Naturals offers some amazingly yummy products..I will be back for more, for sure!

Follow-Up on Homemade Dishwashing Detergent

Hello there! I hope you all are having a lovely weekend filled with fun and love!

Today, I wanted to post a follow-up review on the homemade dish washing detergent recipe I posted a while back. You can see that post HERE. I got the idea to do so after reading Kera's blog post this morning on this very topic. She, too, is experimenting with the same recipe, as well as homemade laundry detergent (which, I, too am LOVING the results from the homemade laundry detergent).. I will be keeping an eye on her results to see what she ends up thinking of it. (I mean, it could just be me..maybe the dishwasher, itself).

In the beginning this recipe was fabulous! The dishes came out very clean. L.O.V.E. Unfortunately, lately the dishes have been coming out of the dishwasher a bit on the blah side. Not too clean. So, this makes me sad. Dishes should be clean. ;-) So, for the time being I am taking a break from it for a while while I revise and review this recipe.

So, maybe it's build-up. Not sure. I am always very careful to put the vinegar in the rinse aid (very important step). So, I assumed this would take care of build-up. Oh, here's the recipe so, you can see the simplicity of the ingredients (I like it simple).

Homemade Dish washing Detergent

1 Tbsp Borax

1 Tbsp Washing soda (not to be confused with baking soda) (Washing soda can be found in the laundry isle of most grocery stores)

Vinegar (To be used as the rinse aid)

I mix up lots and put in a mason jars (gotta love mason jars). Shake it up, little darling and then put two Tbsp in the dishwasher for every load.

I use plain white vinegar, but only had apple cider vinegar at time of picture taking. ;-)

Coconut Secret: A Review

Hello all! I hope everyone's 2011 has been off to a great start!

We are settling into the swing of things in Gulf Shores, Alabama. It is a lovely place. Lots to do...and well, it's a tad bit warmer than it is in Chattanooga right now and that's just fine with me!! Chattanooga (as many places have been) has seen LOTS of snow, and though I think snow is rad, I don't like it when I can't leave my driveway for too many days. So...the Gulf Coast is proving to be lovely.

I have realized that because I have been without internet for awhile as well as being so busy with life, that I have fallen behind on many of the posts I need to get to. So, I will be playing catch up for some time to come.

One of the areas I have fallen behind and will quickly work on getting caught up is in the area of product reviews. Oh, I love to review products and am kicking myself that I have not been able to get the reviews for the products up quicker. So...on to the review of the day (can't promise a review a day, but it sure would be nice if I had that kind of time lately). ;-)

I gratefully received a package from the fabulous people at Coconut Secret. They sent me three incredible products that I am thrilled I had the opportunity to sample. I will be buying these products in the future when I run out.

First off we have the Raw Coconut Aminos (left): This was amazing! I used it in stir-fries, on potato wedges, as well as a marinade for tempeh. The flavor is fabulous! I have been a long time user of Bragg's Amino Acids and found that I could easily switch to this instead. Great product!

Next we have the Raw Coconut Crystals (middle): Yummy! One word says it all! I use this in pancakes and anything else that calls for sugar. It is a much healthier (and much tastier in my opinion) alternative to refined white sugar!

And Finally...we have the Raw Coconut Nectar (right): I used this as I would honey. This is so yummy over oatmeal or overnight oats, as well as in tea! The flavor is very tasty! The possibilities are really endless with this product. I have lots more experimenting to do with this and I am super bummed that it didn't make it in the box to go to Gulf Shores. I will have to make a trip back home sometime to get it, for sure. ;-)

I like how all of these products are raw as well as vegan, and gluten free! Like I said...the box containing a couple of these goodies did not end up in my kitchen here in Gulf Shores, and that makes me sad. I must really do something about that.

Castles in the Sand

Hello all!
I hope everyone has been doing just wonderfully! Life has been crazy busy, but crazy good all at the same time. We are currently hanging out at the beach for approximately 6 months. My hubby got a project out here so, life will be a beach for awhile. I am super thankful, too, that a friend of ours will be staying at our house holding down the fort while we are away. Gotta love great friends who need a place to live!!

So, we are enjoying life at Gulf Shores/Orange Beach, Alabama area. I am loving it. The weather is still a bit chilly and windy on some days, but overall lovely. Not bikini weather YET but, still great for buidling castles in the sand and collecting seashells by the shore. ;-)

I was in quite a hurry to head out the doors since I discovered that the hubby has a beach front condo for the next two weeks (we'll be home for the holidays then depart again) and since there was an ice storm heading to the TN area I thought we'd beat the storm and head out early. In the process I lfet behind some essentials..one of which being my cell phone charger. I am phoneless because I accidently left my cell phone charger at home.. I have been wanting to update phones anyway (something smarter, you might say) and well, could not imagine buying something for a phone I did not want to keep...call me cheap, call me silly...well, nevermind...you can't call me if I am phoneless. ;-)

I also forgot to pack that fabulous little cord thingy (oh, I am so techinally wordy, huh?) that puts the pictures on my camera to my computer. So, I have lots of pictures to post but can't right now. Will get those up when I am back home during the holiday. Needless to say this post will be photoless. ;-(

So, today I am on a hunt for a place to live starting the first of the year..wish me luck. The sweet hubby has let me borrow his laptop while he went to work this morning so I can get a move on that so I better get that done.

Hello all! Wow, it seems like ages since I've blogged. Well, let's just say that I could make up tons of excuses as to why my posts are few and far between these days...but, would you really want to hear "read" it? I'll just say busy busy are my days. Feeling Kind of Nutty...A Nuttzo Review

Highlights from the Week..Wordless-ish Wednesday

Hello! I hope everyone had a lovely Wednesday! We had a great one, but super busy! This evening we took the kids swimming at the gym and they loved it!! It's been awhile since we've done that so...it was about time for some well-overdue pool fun! The kids are becoming quite the skilled little swimmers, and they have so much fun together in the pool! It's adorable. I, unfortunately do not have pool pics as the hubby and I are splashing around with them.

JustNatural Organic Skincare: A Review

Hello Blogosphere!! By the sounds of it..many of you are attending the Food Buzz Festival in San Francisco this weekend. I am not one of them, unfortunately...one of these years I will (fingers crossed). I think it would be great fun to go and finally meet those bloggers who I converse with about healthy foods, fitness, and overall wellness. One of these years I say...one of these years.

Really, though...I think that until I really start blogging more about food and dishing out those fantastic recipes to you- should I even dare attend one of these grand events for food bloggers? I'm thinking probably not YET! I'm working on it. Promise!

So, onto a review. I was recently sent a 4 oz container of Natural Body Shea Butter from JustNatural Organic Care to review on my blog.

You might recall I recently did a review on shea butter. I am in love with shea butter. This was my first time trying a shea butter with a mix of a variety of all natural skin loving ingredients. I am always a big fan of being able to pronounce all of the words in an ingredients list. If I can't read it or decipher what an ingredient is...well, it doesn't touch my skin.

This body butter is a lovely, thick, moisturizer for skin. It doesn't feel greasy, blends into the skin quickly, and has a lovely soft scent of frangipini (plumeria) and lavender essential oils. Very refreshing scent. I love putting this on right before bed as I find the scent very calming and relaxing. I give this a two thumbs up! Oh, before I forget...one other thing I like about this product is that a little bit goes along way, which is good because you wouldn't have to buy it as often (I like that). Who wouldn't,especially in this crazy economy? ;-)

Easy Peasy Coconut Milk Makin' with Native Forest!

I hope everyone is having a super sunshiny day! It's a bit on the cold, dreary side here but, I can still feel the sunshine within! ;-)

Well, today I wanted to share with you a little trick for making coconut milk. Me talking about something coconut? Hmmm...imagine that!

A friend of mine recently shared with me her trick for making homemade coconut milk, similar to those found in grocery stores. I quickly ran out a purchased a few cans to try my hand at making coconut milk as well as coconut milk kefir.

The cartons of coconut milk can be a bit pricey and I'm all about saving a few dollars when I can. Another thing is that most of the time it appears that the main bulk of the purchase comes from water?? True, it would be best to get the coconut milk straight from the coconut, but for those who lack the time needed to crack open the nuts of goodness..this is your answer! Of course, for optimal nutrition you should get it from a fresh coconut..that would be best! This would be your next best choice. An option I am glad I discovered! It makes my taste buds dance.

Okay...so, onto the recipe:

I've been using Native Forest brand canned coconut milk as it is the only company that I am aware of that does not use BPA canning.

So, you simply open up the can and mix with 2 1/2 to 3 can fulls of filtered water. Shake it up before each use. It's that simple!

It appears that the cost of the Native Forest brand varies from store to store so, I'm still searching for the best deal. Greenlife grocery seems to be the best at the moment, followed by Earthfare.

Coconut milk is relatively low in protein so, I might experiment with adding a smidge of protein powder to the finished product, but maybe not. It's just a thought. We shall see. I have yet to get my hands on a good vegan, raw protein powder anyway (though, I know they are out there).

Monday Music...plus Costume Fun!

Hello! I hope everyone is having a wonderful first day of November! I can't believe it is already November! This year is flying by so quickly! Well, I missed my morning boot camp class today. Oh, I hate to miss a workout but, sleep was so needed and I couldn't stand the thought of leaving the warmth of my hubby (he is my own personal heater) in our bed. Baby, it's cold outside that early in the morning!! But, I'll hit up the gym bright and early tomorrow morning and work doubly hard. ;-)

Oh, I hope all had fun dressing up last night (if you did). We didn't dress up this year, next year we will. So, I've been thinking that I really need to start baking up some unique things and share them with you all. I am not too gifted in creating my own recipes, I'm sad to say. But, I could still share pictures of some of my kitchen creations, right? Right! I will work on that one...yes, as well as posting information on my exercise activity. I love exercise so much and yet, speak so little of my routines and such. Work on that...will do!

So, on to some random Monday Music...I got this song stuck in my head this morning. It's from that television show Cheers, which I used to watch as a kid. Why my parents allowed me to watch a show about life in a bar I do not know, but I remember always liking the song. I'm sure the fact that my name is 'Kelly' played a part in that...I could never get over the fact that Kelly was ultra snobby and so ungrateful...Who wouldn't LOVE having a song written and then sung for them? That would be gift enough for me, folks!! Anyone agree with me on this?

This just makes me laugh!

Candle Duo Giveaway + Review ~Soy Candles by Phebes

Hello all! Well, yesterday was an absolutely beautiful day...beautiful weather, beautiful company. Yep, like I said...beautiful day.

The Hubster left on a motorcycle trip with a friend of ours so, it was just "Little Sprouts" and me..fun times were had hiking up and down our long driveway (it's tucked back in the woods and is winding and steep so it's fun and great exercise). Also, a trip to the park was enjoyed by all. My sister and her adorable kids met us at the park. My sister's kids, who, are currently taking gymnastics at the elementary school, taught me how to do a back bend. Yes, I never took gymnastics in school...and honestly, I feel I missed out! Watch out gymnastics world...here I come. Ha! Sadly no pictures are currently available on my grand back bend. But, I rocked it!! ;-)

I recently received some soy candles to review from the fabulous company, Soy Candles by Phebes. Oh wow! What an experience! Let me first say that I absolutely adore candles. In fact, Fall seems to scream for candles to be lit and enjoyed. Anyone else agree with me on this?

So, the two candles I was graciously sent to try were Ginger Bergamot and Red Current. Both of these scents are outstanding! I have tried my fair share of soy candles over the course of my life and can say that I love these best. The smell from the candle fills up a room perfectly. I didn't have to stick my head right above the candle and risk burning the tip of my nose to get a good whiff. The Ginger Bergamot was lovely..perfect ginger aromas filled my kitchen. My nose was happy (and not just because it avoided being burned). ;-)

The Red Current scent rocked! This scent seemed to be even stronger than the Ginger, which I like my candles strong so I was very happy with this scent.

The two tarts scents I received was Vanilla Pear and Butt Naked. Yes, those are some naked bums pictured on the Butt Naked tart packaging. Creative, heh?

Vanilla Pear smelled so good I almost wanted to eat it at times. It was lovely!! The Butt Naked was out-of-this-world fresh and clean smelling. As if I just emerged from the shower. I'd definitely want to have Butt Naked burning after getting home from mountain biking in mud (I love mud fun). Just the smell would make me think clean, fresh thoughts. ;-)

My Cup of Tea & Two Reviews

Hello Friends! I hope you all are having a wonderful day!

I want to take you on a adventure...I want your imaginations to run wild. I'd say close your eyes, but that would make reading this a bit challenging. ;-) So...the adventure will be to imagine you are me. Sounds funny, huh? Picture for a moment you are in the middle of a fun, but hectic morning-a high energy day to say the least. Life is busy, lots of noise, lots of laughter, maybe a few screams as one child pulls their sibling's hair ;-(. Can one really refer to a day with kids as anything but 'high energy'?

I wouldn't change anything for the world. I am beyond blessed...much more than I deserve. God has blessed me and I am forever grateful! There are some days, mid-day..after feeding the kids lunch, reading them their afternoon stories, and getting them situated for their quiet/nap times that I simply crash..Wow, and it's only 1:00 in the afternoon?? Whoa! So, it's those moments when I need to unwind and momentarily put my feet up (if it be for only 5 minutes).

Enter onto the scene- a nice cup of tea.

I have never been into drinking coffee.it's just never been my 'cup of tea'. ;-) I've somewhat just recently discovered green tea. I love it now. It is a delicious tea with loads of healthy antioxidants. It also has just enough "pick me up energy" aka caffeine to make me happy.

On the topic of caffeine- being what I know about caffeine and how caffeine isn't really all that healthy for me in the first place, I keep my consumption of it low. I try to drink no more than a cup a day. Really that is all I want. I believe that a cup should easily give me a healthy dose of antioxidants as well as be a treat for when I need a 'mama break'.

So, what about tannins in teas? I've read somewhere (sorry source is fleeting my brain right now) where that there are some who drink several (maybe up to ten) cups a day of green tea. The reason this is so shocking for me is that many suffer from anemia., me being one of them. ;-( I rarely read about tannins and teas on other healthy living blogs (though, that's not to say it isn't there..I may not be coming across it). Tannins make it difficult for the body to absorb iron. So, that's another reason I keep my consumption of it low..after having had two babies my menstrual flow can be heavy (aka anemia city)...sorry, was that too much info? hahaha! I make sure to drink my daily cup at least a couple hours before or after a meal, and I also try not to drink it daily during while I'm on my period. Anyone else deal with a similar issue? Oh how I wish even good things didn't come with side effects! ;-(

Maybe the ones drinking lots of green tea knows something I do not (quite possibly). I'd love to know their secret! Although, I honestly prefer to drink good ole' water throughout the day, with just a cup of tea for a healthy boost...I'm still curious what the secret is. ;-)

So, lately I've been experimenting (after a friend's recommendation) that I give yerba mate tea a try. It has fewer tannins than green tea, which is a plus for me. So, combine that suggestion with the gracious sample box I received to review from Mate Factor, I embarked on a a new tea experience.

The flavor is outstanding! It is also quite energizing, but in a different way than what I experience with green tea. The energy and focus lasts much longer and with no jittery feelings (though, I never get jittery with green tea). I also love how it is very high in antioxidants..4 to 6 times higher than green tea. Good to know!

Oh, one thing I've recently learned is that studies are showing a correlation between drinking teas hot and various types of throat and mouth cancers..so, I'm careful to let mine cool a bit. I prefer to keep my taste buds free of burns anyhow, so this works out great! ;-) Call me weird, but I like being able to taste my food. Good for you to know? ;-)

So, lately I've been enjoying the yerba mate with some NuNaturals NuStevia White Stevia Powder. I received the pictured box from the fabulous folks at NuNaturals to review and it has proven to be a wonderfully sweet partner with my yerba mate tea! Score! A match made in heaven! This is wonderful stevia powder and the the little packets aren't just cute, the stevia inside is delish...never bitter, which is a huge plus! Also, you don't have to worry about spikes in blood sugar. They also sent me a fabulous packet of recipes that I have been working on...pictures to come. I am also experimenting with recipes using stevia. Yep, those to come soon, too!

So, this afternoon's tea time proved to be a wonderfully relaxing, yet energizing one thanks to my two new friends...Mate Factor yerba mate tea and NuNaturals NuStevia Stevia. Just what a mother needs to unwind...okay, I will stop the commercial tones. I like them. Enough said.

My Love for Exercise plus a Wheat Grass Juicer Review!

Hello! How's your day going so far? I am off to a busy start today. Yesterday was an absolutely amazing day...the weather was gorgeous! I took advantage of it by getting in a great run and some abdominal work (well, I actually did the ab work inside, but you get my point.) ;-) I am especially loving the plank these days. What a great way to target the areas of the abs!! What a great core exercise! Don't you just love a good workout? I love going running...it helps clear my mind and is so rejuvenating! Today I am feeling the pain from that ab workout and it is making me smile. It's the simple things in life, you know!

So, right now I have tons I need to be accomplishing! I am going to take a bit of a break to tell you about a package I recently got in the mail. Have I mentioned how I love getting packages in the mail?? Yes, I do love those sweet packages! Speaking of sweet.. the people over at Lexen sent me one of their HealthyJuicers to review. I was super excited to receive this juicer as I have been wanting to get more into juicing wheat grass and have been looking to compare wheat grass juicers. The health benefits are plenty of wheat grass!

So, onto the review...here is some pictures from some of the multiple practice sessions I had with it.

I was very happy with how this juicer juiced the wheat grass. An electric would have obviously done the job much faster, but I was very impressed with how well it did the juicing. I would definitely take this juicer with me traveling as it is super light and easy to clean. Here is a picture where you can see all the pieces..

Now...on to making some apple cider with the juicer....

Since I had an extra box of apples (oh, I love Fall) I thought some apple cider making was in order.

I made sure to slice the apples thinly as this made the juicer work more efficiently.

Overall, I was very happy with how the juicer juiced the wheat grass, apples, and celery. It was super easy to clean and to put together. I recommend this product especially for juicing on the go away from home. I would love to eventually buy their electric juicer!

Not So Wordless Wednesday: Leaf Hunting, Fall Love, Homemade Dishwasher Detergent

Hello All! I hope you are all having a wonderfully blessed day! So, normally I keep my Wordless Wednesday not too wordy...after all, the name implies that it should be. But, I've feeling kind of wordy today. ;-)

So, here are some shots (some fairly random) of our adventures outside enjoying the Fall colors and gorgeous weather...Notice the stickers on my truck (aka random shot #1). Oh yes, we love Colorado! I'm curious if we'll be hitting up the slopes this year (may have to wait until next year, is my guess..too bad Rocky got a season pass last time we were there and we may not be able to use it). ;-(

This last year we got to get pretty cozy with Arapahoe Basin. This truly is a great place. Nice, laid back people..great snow. Yep, it's a keeper! You can see some pictures from our last trip to Colorado here.

Oh my truck needs cleaned and the stickers need some attention, too.;-)

Oh the colors of Fall!

Lately I've been making my own laundry soap and now....homemade dishwasher detergent. We've been saving some serious cash by making these at home. It still shocks me when I see the cost of laundry and dishwasher detergent at stores.

Many of the items I use in my laundry soap (which is great) I also use in the dishwasher detergent. Here's the recipe for the dishwasher detergent. Please note that in the picture I am using a really good apple cider vinegar (all raw and all). This is not necessary as you are not eating it. Really, I was supposed to be using just plain white vinegar, but since we made "volcanoes" as a science experiment with the kids (you know, baking soda and vinegar makes a mini volcano,right?) we were all out. The ACV does great, but I'd rather save it for eating..

Okay...seriously now, the recipe for the dishwasher detergent

1 Tbsp Borax

1 Tbsp Washing soda (not to be confused with baking soda) (Washing soda can be found in the laundry isle of most grocery stores)

Vinegar (To be used as the rinse aid)

I mix up lots and put in a mason jars (gotta love mason jars). Shake it up and then put two Tbsp in the dishwasher for every load. Do, remember that the vinegar is very important key in the rinse aid portion of dishwasher.

Simple recipe, inexpensive ingredients. I can handle that!

Product Review: TofuXpress

Happy Monday everyone! I hope you all are off to a great start! I've got lots to do...the list is long.

I was thrilled to try out the TofuXpress. I'm sure some of you may already be familiar with this fabulous device, maybe from other blogs. It makes me smile when I get to try out a new product that I believe my readers would enjoy. The TofuXpress was no exception.

The Tofuxpress has proven to be a real time saver in the kitchen, especially when I prepare tofu. (Anything I can do to save time in the kitchen scores big with me). I remember back in the day when I would have to load up the paper towels (I know, not environmentally friendly) and put the tofu in between plates to push out the excess water. Oh, those days are over now that I've discovered this nifty kitchen gadget.

So, I had to try out the goodness of this gadget upon receiving. Unfortunately, the pictures are not the best as I was not impressed with the tofu I had to work with. It was an extra firm tofu, but not as firm and easy to work with as Nasoya or a similar brand. So, pics of the finished product do not exist. I've recently received a coupon for Nasoya brand and will be getting more tofu soon (oh, how love coupons)...so, I will post again with better tofu pictures soon. This post will at least give you some visuals of how it all works. ;-)

Now, we don't eat copious amounts of tofu at my house, but when we do eat it it is nice to have a tool that will cut the prep time down, as well as make the finished product much better tasting. It truly makes sauteing, frying, or baking that much better. The flavors of the tofu seem to pop quite a bit more, which is a plus!!

I was very pleased with how the TofuXpress easily squeezed out all of the excess water from the tofu! I highly recommend this product. I am looking forward to getting some more tofu and experimenting some more with my new friend. ;-) Now...if it would only do dishes, too. ;-)

So, after the applesauce making fest (and a few extra apples)...it was time to make an apple pie. Now, if I was the proud owner of an Excalibur Dehydrator (or any food dehydrator for that matter) there would have been dried apples made, but I digress...

While reading the book to my kids, 'The Seasons of Arnold's Apple Tree' by Gail Gibbons I was inspired by the recipe which was included in the book, and I set off to the kitchen to my very first attempt at an apple pie. The finished product was quite tasty..yep, even my hubby liked it. SCORE! I was not prepared though for how messy baking an apple pie could be (the book didn't include a warning label) ;-) Apparently, it is essential to keep a cookie sheet in the oven to collect the juices from the sugar and the apples..wow, I learned that lesson quickly. ;-)

I don't know about you all, but colder temps leave my skin pretty dry. I truly don't dig having dry skin. So, I was so excited to get a much needed package in the mail this week. The answer to all my dry skin problems...

Oh yes, that made me smile!! Now, don't get me wrong..I'm not turning my back on my coconut oil (I still love you good ol' coconut oil). Hello Blogosphere! Hope you all are having a fabulously healthy happy day! Life is chugging right along...busily. So busy that remembering to stay hydrated is super important and can easily be forgotten, sadly! What perfect timing when I recently received this stainless steel water bottle from New Wave Enviro Products to test and review.

First off let me start by saying that I am a lover of staying hydrated. In fact, I almost always have a water bottle with me. My kids are following after my first steps..Which is great!

Re-usable water bottles are the way to go. So much better for you as well as the environment. Less waste is best!!

I have been on the hunt for the "best" water bottle. There are so many on the market, which promise this and that....so, I'm on the hunt to discover my favorites and to share my thoughts with you all.

I have been quite pleased thus far with this water bottle. The color, for one, is very pretty! I love how it comes with a matching colored carabiner! The carabiner is great for when you just want to clip it to your things and go. Being a mother to two this is a great feature for me. Besides being functional..it is also cute, in my opinion.

Drinking from it is also is nice. I like how the cap comes off for easy chugging!

I did accidentally drop it on a sidewalk while trying to quickly feed a parking meter in order to get to an early morning meeting, and it left a couple dents in the water bottle. No biggie, though...I honestly, think it adds some character. So, yes...that has never happened to my bpa-free plastic water bottles, but hey..like I said, life can get "denty" sometimes and I don't mind a few defining marks to give a "history" of my past happenings. I mean...even people fall down and can get a few dents here and there. ;-)

It Rains in Rain Forests, B-day Fun, and I Heart Sprouts!

Hiya Bloggers!!

Yes..it rains in rain forests...interesting story. But, first off... recap from little guy's birthday celebration (on the day of)! My son turned 5 this week! 5 years old!! I say it twice, as I am really in shock. It seems like just yesterday that he was born and having taking life by storm. He is my miracle child. Long story short (I'll include his birth story on another post). So, the morning of big birthday he requested apple muffins..okay, simple enough. WRONG! It was a flop but he didn't seem to mind. Yay! Not sure what went wrong. So, at this point the recipe is not worth sharing..but, I'll share some pics..

This week I also started sprouting my own alfalfa sprouts! Yay! I love sprouts: the smell, taste, color..the whole nine yards. There is something magical about watching them go from tiny seed to sprout. Just kinda fun! They are like little babies which grow and flourish...okay, I'll stop. I also love how nutritious they are..so far I have only sprouted lentils and alfalfa seeds. I'm sure I won't be stopping there.

Moving back to birthday fun! Here is one of my favorite pictures taken from his birthday party. It was a carousel theme, but little man wanted a super hero thrown into the mix so I made him cupcakes (which didn't make the trip from home to park to well, thus no picture is included) with Spider Man on them. That made him happy..you see, his younger cousin, who has the same birthday as him was also celebrating her birthday on the same day...it was a shared party. So, carousel theme for her with a splash of super hero for him. ;-)

Now back to Rain happening in rain forests...Rocky and I did a day hike of 13.5 miles at Fontana Dam in the Smokies last weekend. It was great fun! Rocky's mom and dad watched the kids for us! Let's see...it's the Smokies, and being a rain forest that it is it rains ALOT! As I get older and become less and less high maintenance (it's true) I decided I would only pack an extra fleece. Just hike in the clothes on my back.

So, never wear jeans for even a day hike. Let's just say that by the time we reached the trailhead my jeans were soaked and I asked Rocky if he had any scissors..to complete the hike without being tortured with heavy pants we decided to make them into shorts. I did contemplate just hiking in my underwear, but I thought other hikers might be taken a bit off guard by another hiker trekking down the trail in her skiivies.. so shorts it was...it rained and thunder stormed for about four miles of our hike. Great fun! Seriously...this was a blast as I love mud and spening time with the hubster!! I can't wait to do it again! Next time, I will pack appropriate clothing! ;-) Either that or embrace the idea of hiking in underwear. Hahaha!

No pictures were taken during the hike as I did not want the camera getting wet. It was so fun..I love hiking! Great to get into nature, enjoy each other's company without the business of everyday life, and exercise all at the same time! We were pulling 3-minute miles, roughly. Fun times!

Hi Bloggies! I'm back...it's been awhile! Oh well, life happens! Life is happening, in fact, in a fast and furious, yet fun fashion!

The hubster and I have busy with the new engineering business...getting company logo all designed from our fabulous graphic artist and friend, Mandy Phillips with Visual Connections. So next up.. business cards done, company brochures, office fixed up (well, my hubby is working on that). So much to do! Through it all , I truly see how God is leading and blessing us, and I am so very thankful. Things are falling into place....Praise be to God, for sure!

Meanwhile on the home front..I am working on marketing for the company and going to as many Chamber of Commerce meetings as I can. I am enjoying getting out and meeting other adults, and of course working with my hubby to better the business is wonderful. When I'm not doing marketing and trying desperately to keep the house clean (a bit hard to do when little hurricanes aka children keep the house in flip flop shape) I am homeschooling my four year old..we are both enjoying all the preschool lovelies..my youngest is also enjoying the activities.

I am also experimenting with going gluten free as much as possible, as I believe I may be gluten intolerant. Really, the only signs of intolerance I have is that feeling sluggish and overall unwell after eating gluten. As if my digestive system is working overtime. A friend told me I should rule this out.

I do feel so much less zombie like when I keep gluten out of my system. But, I'm a bit nervous about this endeavor. I can do the vegan thing just fine. I am not allergic to dairy, and I generally do not eat dairy at home, but away from home I may have some and that is fine with me. I do it for health reasons..not for animal's sake..though, I do love animals don't get me wrong.

So, I realize to really test for an intolerance to gluten I will have to take it out of my diet for at least six weeks..this is concerning. Simply because it is going to cost more money and take so much work. I work enough as it is about making sure my family and I eat healthfully..I'll figure this out, but am just a bit apprehensive. Would love any one's input and suggestions. I feel as if I don't know where to start...fortunately, I know of some awesome blogs that are gluten free. Here's my issue..every recipe that looks tasty that I come across I find that I am missing ingredients (expensive ones at that) and of course, I do not know how I would replace the missing ingredient with a substitute. Errr....so frustrated! But, I realize I can do this with God's help and support from family, of course. So, I continue to do research and brace myself for the bumpy ride. ;-)

I love this picture of my youngest after she finished her green smoothie. Green mustache, of course! She was about ready for her afternoon nap at this time. Can you see the tired in her eyes? Now, do you all look so green after downing a magical green smoothie? ;-)

Also, I recently made some Potato Angels and they are delish..I love the name. They are a vegan eggless version of deviled eggs..you must make them. My hubby loves them! This is saying ALOT! Ooh La La: Coconut Love

Hi All! I hope you all are having a fabulous day! Oh happy day here in the home of coconut land ;-) ! I just got a jar of some coconut oil from Tropical Traditions. It is indeed a happy day!

Let me explain...I am a coconut lover. They are simply amazing things,those coconuts. I don't just devour them, I multi-use them. Smoothies, coconut water, coconut oil, coconut butter, coconut milk...you name it. If it is coconut related I am usually on board.

So, what do I mean when I say "I multi-use" coconuts? Well, I moisturize with coconut oil, too. It is my skin moisture-quencher of choice. Not just because it makes me think I am on some tropical island somewhere warm and sunny..it's also because I find it to be a healthier alternative to lotions and the such on my skin. Years ago I was not concerned about what I put on my skin (with the exception of during my pregnancies). This included makeup and lotions. After doing a great deal of research I discovered all of the nasties in commercial products and have chosen to ban them from my daily skin regimen. I'm so happy I did. Then I discovered coconut oil...the rest is history!

So, now I keep a small jar of coconut oil in my bathroom for my hair as well as my skin. Coconut oil is absolutely fabulous!! Softens so sweetly!!

Next in line to try: coconut flour. I've come across so many yummy-sounding recipes around the blog world that I must try it..I have a feeling that coconut flour will become a favorite as coconuts have such a great track record with me. Yes yes...thus the Twitter name: 'coconutkelly'.

Okay...so back to my mail goodie!! The virgin coconut oil I received from Tropical Traditions is super tasty, in fact, it is my favorite coconut oil to date. Bursting with coconut flavor...much more so than others I have tried. I give this virgin oil a thumbs up! The size, too, is a perfect amount as I use coconut oil frequently. And for the price you get a lot of bang for your buck!

I can only imagine how wonderful it will be when I bake and top things with it. Seriously, I was so excited to have this in my possession that I just whipped out a spoon and enjoyed the creamy goodness straight from the jar. Yu-umm-y! Oh, do I have plans for this jar of yumminess. This jar won't last long as my ideas are flooding my mind as I type! Baking, smothered on toast...hmmm, where would I stop? ;-)

More coconutty news: I love coconuts so much that I have now changed the name of my blog to reflect that..so, now my blog name is now 'Coconuts and Freckles'. I am sure by now that you notice I am sooo indecisive with the name of the blog. Hahaha! I can be so exhausting, huh? That's what my husband thinks, too. ;-) I'm sticking with this name, though..In fact, I asked my son and he said he liked the new name better. So, here we go...hold on tight! He was excited that his opinion mattered so much. It does!!

Favorite Foods, Loss of a Pet, Busy Days..

So hi to all my fabulous readers!! This is a quick post to let you know I'm still here and to let you know what's been going on over here on our little hill in the woods..

It seems like ages since my last post. I have come to the realization that I could apologize for my lack of posts over and over again, but what good would that do?..For now it is how it is, with starting a new business, taking care of three kids (I have two of my own and watch another four year old during the week for a friend), striving to keep a clean house, homeschooling, oh and mix that in with several painful bouts of an ear infection/sinus troubles...well, there aren't enough hours in the day. For now anyway. But, hey...when I can I will post more often. So, don't give up on me ;-) I'd love to post everyday, but it's not a priority right now. I know I've said this before though...I am very glad that many of you are so consistent with your posts as I do allow myself a little time everyday to browse my favorites (you know who you are).

Okay, so the other day my mom-in-law asked me what my favorite food is..or meal. I had to think about this for a minute. Hmmmm....there's so much to choose from. Well, since I was a kid I have always loved rice and beans. Pretty simple, huh? I'm so easy to please. And of course, if you know me even a little bit you would know that I absolutely ADORE green smoothies!! Love, love, love them!! Yep, If I had to be stranded on a deserted island I would choose to have my Vitamix with me and hopefully would have access to lots of fresh foods and could enjoy a green smoothie daily! ;-) Lol. I seriously could happily live on GS's!!

Green Goodness: Pre Glass Style

This week has been a blur. But, a good blur. I've been marketing lady for my hubby's new civil engineering firm lately. WOWzers...what a job, but one that I am enjoying! It is fun to work along side my dear hubby! Okay, enough with the sales pitch, huh? Well, what can I say...it has been a big part of our lives right now and it's fresh on my mind. ;-)

I am incredibly proud of my hubby for his hard work and dedication! I admire him in countless ways!

Oh, so more news from the home front..our cat ''Yoda" has disappeared. We live on eight acres and he loves to be outdoors, just as we do..he's an inside and outside cat. Honestly, I'm not much of a cat fan, but he quickly became part of the family. We got him shortly before my son was born almost five years ago...well, we haven't seen him in about a month. A friend pointed out that he may have gotten sick and knew he was going to die so maybe he left to do that. That is sad and well, I prefer to think that maybe another family took him into their home (as he didn't have a collar). Happier ending, right?? We do miss him. ;-) I hope he is well.

Feeding Kids Right..Teaching Kids About Healthy Eating

I get so excited when I see kids eating healthy foods and being conscious of the foods they are eating. Kids need to be educated on the importance of healthful eating, just as they are taught mathematics and grammar. This kind of education should start in the home. Parents truly have the power to encourage their kids to eat to live as opposed to live to eat. Of course, this takes the parents themselves believe in the importance of feeding their bodies healthy, nutrient-rich foods.

I am very passionate about eating healthfully and teaching my kids the importance of eating clean, real, fresh foods. I hope that they will continue on with living healthy lifestyles years after they leave our home and go off and make their own food choices. I also teach my kids the importance of having certain things in moderation...meaning, yes, it is okay to eat sweets in small amounts (and I hope that my love of raw dessert experiments pay off and they seek those...hey, it's worth a try, right)..fortunately, they LOVE all of my kitchen creations.

Now, don't get me wrong...I am not perfect. I'd love to meet you if you have this area of diet and nutrition all figured out. I love to learn as much as I can. Everyday I learn something new that I put into practice, whether it be a new exercise, a new recipe, new natural remedy, etc. I'm always seeking new information and I am not hesitant to discontinue eating something (or at least cutting down on it drastically) or doing something that I learn to be harmful to myself and to my family. After all, I look at it as my job as a SAHM to do this. Of course, it is also a passion of mine, as well.

My kids are very familiar with fruits and veggies. It is a part of their lives. We love to look for the colors of the rainbow in our food. The brighter the colors the better!!

It is my dream to have my kids look at food as a way they can keep their bodies healthy and also to realize that by eating healthy foods they help their minds stay strong for focusing on God.

Unfortunately, not every one looks at food the same way I do. Many kids, sadly never eat any fruits or veggies. Shocking, too, is the fact that many kids can't recognize fruits and vegetables (as I learned from this video below). This is saddening.

While I taught preschool in Colorado some years back, I saw glimpses of this growing problem of children not being fed nutritiously, and thus not being taught healthy eating practices. Many of the students came to school each day with belly aches and illnesses. Each and every day these kids came to school with lunches consisting of only processed junk (can we really classify the junk as food? No, we can't.). As the teachers, we talked with the parents encouraging them to pack more fruit and veggies. Some began to do so, some did not. We sent out letters requesting healthier lunches be sent with the students. Now, don't get me wrong..this was not the case with all the students, but I would say majority. My heart ached for those students with constant tummy issues. Fiber would have done their bodies good, but being kids...they couldn't do much to change what they were being fed.

What can be done about this?? Education is key, I would say. Watch this video and see what I mean.

Processed foods can be so easy and inexpensive. I think this has much to do with how fast paced our society is...we need things cheap and in a hurry. This is killing us (or atleast those who fall into the trap). Sad, but true.

Whirlwind Week Recap & Banana Muffin YumYums!

Hello all! It seems like my posts are few and far between. This one is no different. I am so happy, though, that I can take a few moments each day to keep up to date on the fabulous blogs I follow. You all truly inspire me in the kitchen, for sure. I've been trying out lots of new recipes lately (all coming from some wonderful blogs out there). I will post pics and recipes and where I got them soon.

Life here has been super busy!!! It's pretty much been a whirl wind of a week, but a wonderful one at that. This is one of my favorite times of year. This week was obviously 4th of July for us Americans and then...on the 6th, Rocky and I celebrated 7 years of marriage. Since we both had work to do that day on various projects we celebrated it in passing, but will officially celebrate it together on a night without the young sprouts soon.

And...on the 7th our youngest sprout turned 3! Yep, she was born on 7/7/07 and she was three days early. The years have flown by all too quickly. Where's that pause button when you need it,right? Lol. We will have a small get together with family on the 11th to celebrate!! On the morning of her birthday, I made yummy vegan banana muffins which turned out soooo lovely! Our tastebuds danced!

THREE CANDLE BLOW-OUT

Next time I won't add as much sugar, as the bananas are a great sweetener. Maybe drop the sugar by half next time is what I will do. Here's the recipe: The Best Banana Muffins Ever

FROM VEGWEB.COM
Ingredients (use vegan versions):

2 tablespoons unsalted vegan soy butter
2 heaping tablespoons sugar
1/2 teaspoon of vanilla
2 very large ripe bananas
1/2 cup all purpose flour
1/2 cup dry oats
1 heaping teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
pinch of salt
walnuts or carob chips, optional

Directions:

Preheat oven to 375 degrees F.

Put the butter, sugar, and vanilla extract in a pan on a low heat to melt, then remove and set aside for a few minutes.

Mash the bananas and, in another bowl, measure out the flour, baking powder, baking soda, cinnamon and salt. Don't over mix: just stir a couple of times; you will have a not terribly attractive lumpy sludge, but don't worry about it.

Fill the muffin trays about two-thirds full of mixture. Put in the oven and cook about 25 minutes. Leave in pan for 5 minutes, then remove to wire rack for another 5-10 minutes or until cool.

Enjoy the recipe!! It is really great!!

Serves: 24 mini size or 10 full size

Preparation time: 15 minutes

When these were done in the oven I sprinkled them with chia seeds, as I am chia-seed obsessed. They added a great crunch to the finished goodness!

Later that evening we headed to Chester Frost Park. This is a very nice place with a nice little beach...the water was so nice and warm.

SAND CASTLE TIME

Rocky tried my raw pasta for the first time...first time I made it so, obviously...first time he tried it. ;-) And YAY...he liked it!! Hmm...the recipe?? It was super easy. I do not currently own a spirlizer YET so I used a carrot peeler and shredded a zucchini squash..topped that with marinara sauce (will soon be homemade sauce once my tomatoes in my garden start coming in and can't wait for that!!). That's it. I will get fancier with it, but I'm was happy as so were the kids and the hubby!

Sushi, New Additions, Hitchhikers, and Little Feet

Hi! Wow, this post is a bit late..life has been so very busy lately! Must take a breather..

So let's see...well, you might have noticed I changed the name of my blog again. I am a silly girl and naming things can get so fun for me that I just can't stop. It's a gift and a curse? Okay, it's pretty much just silly I know. Maybe I'm done??

We have been really working hard on getting Rocky new clients for his civil engineering business. Check out Rocky's website if you haven't already. Honestly, it is fun working with Rocky on this project. I'm enjoying it! He really is a creative person that is super talented at whatever he chooses to do. His career choice was no exception.

So, needless to say that blogging has taken the back burner for a bit. I will post when I can. I really shouldn't be posting as I have a long list of things I need to be doing RIGHT NOW, but you are worth it. And for my sanity, I must.

Well...for Father's day (yes, this is a bit late) I made Rocky sushi for the first time. He had been asking me for while to make it and I never had. I just so happened to stumble across an awesome recipe for it at The Neverhomemaker blog. It turned out great, based on my husband's reactions. Yay! I don't think I could ever be a good foodie as I forgot to take a picture of the finished product (shame shame, I know). But, go grab the recipe at the Neverhomemaker site and see pictures of it, too. It was yummy!

Mama=Superhero

We have been having a problem with Indian moths lately, and they have been trying to get into all of my grains. They are driving me crazy. They have managed to destroy some rice and dried beans. I wasn't a happy camper. They WILL not mess with my 12 lbs of chia seeds and my lovely oats (which I use so often for VOO and savoury oats)...mason jars to the rescue! Since I can't refrigerate or freeze the chia seeds I am taking extra precautions. So, not only am I putting the chia seeds in the mason jars, but then I am placing them in a plastic bin..paranoid much???

I am also being a superhero for my precious maca powder!!

I believe I have the problem under control (that's what you get when you eat naturally, I'm afraid). I discovered that they (indian moths) can hitchhike home with you from the grocery store. So uncool! Always be sure to check your packages of grains and such before leaving the store. Look for little holes as that is a big clue.

Moving on...I LOVE Chaco sandals! Wearing these are kind of like slipping your feet into a cloud...wonderfully confortable! I have high arches and these suit me perfectly! I'd wear them for every occasion if I could. People that know me would agree. So, here in this picture Miss Sunshine is trying on my beloved shoes and I just had to snap a picture..yes, they have been busy working out in the garden with the kids and I, and well...could use a good cleaning.

Other news on the homefront....

We have a couple new additions...Little Man saved up enough moolah and bought himself a couple goldfish. He named them Rockstar and Rocket. Seriously.

Little Man is very thrilled to finally have his fish, though you really can't tell by looking at his face in this shot.

My Dreamer's List & Changes to the Munchkins' Rooms..

I am a dreamer. I love to dream. I dream in color. My list is pretty lengthy, in fact, of things that I would like to accomplish before I expire (okay, that just sounds so wrong). It's true,though. I will give you a brief list of some of those dreams I have. In looking at the list I hope it gives you a little better understanding of who I am and how I tick. Okay, so onto the list:

Successfully home school my children (will take it year by year)*
Become a personal trainer
Become a Pilate's Instructor
Become a Spinning Instructor
Become a Wellness Coach ( www.wellcoach.com )
Become a Children's Book Author (at least one book would make me smile)

*I am already a licensed K-8 teacher, but it is different when your students are your own children and you teach from home, at least I think so. I am so excited to stay at home with my ~~babies~~ kids and to teach them!

Whoa! Just looking at this list can be a bit overwhelming for me! I must say that I am thrilled to have dreams, but that I am currently living my dream! I am a wife to an amazing man and together we have two amazing children. I am able to stay at home with them, which is a dream come true! I am so blessed to be able to watch them grow, teach them, feed them healthfully, and of course to bring them closer to God daily. I realize that many mothers do not have this privilege, and I am beyond grateful that I do.
So, I can keeping my eyes focused on pursuing these dreams/goals, but not forgetting or losing sight of the dream I am currently living. I believe that it can be all too easy to plan, plan, plan for the future that you never really take the time to enjoy the present. That would be sad as time has a way of getting away from us quickly.

Anyone else have similar goals? Anyone actively involved with making similar dreams come true? Tell Kell!

So, on to doing something new and exciting with the kids' bedrooms..Well, let me start by saying that my daughter's room has never been completed, in the first place. Sad, I know..she will be three next month and mama still hasn't finished her room (it is currently an unfinished red painted color, and it was obvious that mama relied to heavily on the painter's tape)...pictures aren't needed as my paint job is seriously horrid. Poor girl. So, I owe it to her to make a pretty place for Lady Love to play and sleep. Here is the color scheme I have planned for her (notice how the edges of the paint card appears to be chewed up...hmm, silly girl! ;-)

So, as you can see...I'm going with a bright, cheery Geiko Green color with hotpink accents. Girly, for sure! Lady Love with love it, for sure! I've gotten the "okay approval" from her, rest assured. ;-)

As for Little Man's room makeover...his room, right now, actually is nicely done. If I do say so myself. He loves the outdoors so I brought a bit of the outdoors TO his room. He even wanted flowers to trim the carpet. But, now that he will be turning five he wants to go BLUE. So, blue it will be..

Decisions, decisions!! I have decided to do blue with brown accent color for Little Man's room. He approves!! Right on!

This is what Little Man's room looks like now...at least for awhile until it goes BLUE! The picture doesn't really show it, but here it is a Baby Bee Yellow color.

Okay, so the wall paintings may not be considered "artistically correct", but that doesn't bother me...the Little Man loved it and that's all that mattered. ;-)

Now on to the kitchen...yes, I really need to start photographing more than just my water kefir.. It's just so exciting and new right now. I will post dishes I prepare soon. Don't give up on me. ;-)

The water kefir is doing great and growing quickly...I have already shared some of my grains with my in-laws and now am hoping to share with some friends...this is a picture of the drains being drained (the drained result is what you pour down the hatch).

Here you can see the liquid portion...the healthy, easy-to-make, and cost effective probiotics that you can drink to health.

Now, onto some randomness in the kitchen: Rocky made this little stove out of a beer can years ago..this has been well used while camping and backpacking. Doesn't it just explode with awesomeness?? Rocky is always doing resourceful things like this. I love that man!!

Anyone else ever make a camping/backpacking stove out of an aluminum can? Any suggestions on my kids room makeovers? Anyone need some water kefir grains?? Mine are happy and growing. I would love to share!

Hello to all! I hope this past week has found everyone doing great! Did you notice that I changed the title of my blog again?? Yep, I sure did. Honestly, there seems to be lots of spin off on the phrase 'peace love and happiness' on other blogs...so, I chose to change. It was my attempt at setting myself apart in a little way, I suppose. Don't we all try to be unique? It's either that, or well....I'm fickle. Yes, I'm that too (at times, but becoming less fickle as I get older...at least in my opinion) So, I started to analyze how I eat in general. I came to the conclusion that I love plants! I love love love to eat as naturally and clean as possible.So that is where 'Mama Eats Plants' was born. Basically, as I slowly evolve into a better blogger my blog is evolving along with it. I am not scared to change things if they need changing...including the title. Just going with the flow..

My hubby and I are still discussing and coming up with a strategy to make the 'sail around the world' adventure come alive. We have been looking at sailboats. Water kefir update!! This week was our first week trying out the new water kefir. It went great. I started the family out small...just a bit every other day to make sure that it agreed with our tummies. No side effects were noted (or no one complained about any anyway). I have now increased us to consuming some homemade probiotic goodness daily. Yay! I can totally live with getting probiotics daily cheaply and easily. I also love the fact that it is a dairy free source! Right on! You seriously have to try this stuff! Either order some or get some grains from someone else who is doing this!

I will continue to experiment with the water kefir recipe. As of now I have tried using Florida Crystal's natural cane sugar as my sugar base and have used a bit of sucanat or molasses for extra minerals. I am also using spring water (never use tap as the chlorine will kill the grains) and being that the goal is to keep the grains happy, remember this.) ;-) I am keeping the fermentation period to 48 hours...my attempt to keep the alcohol level lower. You can ferment up to five days. 48 hours is working out great for me and my crew! Oh and one other thing to remember is to never use metal with your grains like a metal strainer or metal utensils..always use plastic or glass!! Good to know, right?? ;-)

So how are my kids liking the taste of the kefir? Well, so glad you asked...my daughter loves it plain, as do I. My husband, Rocky (yes, his REAL name) and my son do not. So we come to a happy little compromise and I put it in GREEN MONSTER and it works. If you are unfamiliar with green monsters aka green smoothies, check out the green monster movement site and see this wonderful resource that Angela from Oh She Glows blog got started. You won't be disappointed! Lots of yummy recipes found there! Green Smoothies are a great way to pack in lots of fresh fruits and veggies. Yay for nutrient-packed foods!! Gotta love foods that make our insides happy and strong all while making our taste buds sing. Oh yea!

I've got so much more to say, but will have to wait for next post. Must go for a run, do some push-ups and some ab work...and hubby will need the only (and lonely) computer for work soon,too! Water Kefir, New Beginnings, & World Travel

Hi! I hope everyone is having a wonderful week! It has been super busy and simply crazy around here.
Well, let's see...let's start with my new healthy project. Last week I ordered some water kefir grains from Erin, The Awesome Water Grains Lady and this week I started my first batch of homemade water kefir. I've got my first batch brewing in a kitchen cabinet as we speak, and I should be able to taste test it tonight as it has been the required 48 hour fermenting time period. Yep, I am excited!!

Are you aware of all the benefits of consuming probiotics (all those friendly bacteria)? I have just recently discovered that about 80% of our immune system is found in our gut. (Unsure of where I came across this awesome information-will post when I find it). With this new found knowledge I decided I would begin my family on some water kefir. I am nervous and excited all at the same time. I realize that fermenting means there is alcohol, so I will be careful of that. To my understanding the amount of alcohol in water kefir is actually quite small and we will start out slooowwwllyyyyyy. Small amounts to start, for sure.

Later on, after I get the grains established I will experiment with other recipes.( A nifty little list of recipes was included with my order..yay!) One that I am looking forward to trying is the coconut water kefir. I love coconut water so this one only seems natural!!

Other exciting news of the week: My hubby, who is a Civil Engineer, stepped out onto his own. He is embarking on the journey of starting up his own Civil Engineering firm. This is so exciting as he has been working very hard towards this goal for years. I am so proud of him and know that he will do amazing things.

Being that we only have one computer (yes, we haven't YET joined the world of laptop owners) my postings will generally only fall on Sundays (this past Sunday didn't happen as we had a birthday party to attend). He is working from home now which is great but interesting all at the same time: trying to keep 2 of our kids (under the age of five) and the other kids I babysit during the week quiet is sometimes challenging. But, God is so good and I know we can do this as he finds clients and eventually gets his own office. I am thankful for babysitting moolah as it is paying for us to eat right now. ;-)

We finished the week off with a bang: with an amazing couple's massage (which we had won at their open house) at Body Mechanics Massage Therapy in Ooltewah, TN. Oh this was an absolutely PERFECT way to end the week. Every tension ache and pain was soothed away. Very relaxing!! Wonderful massage therapists!

We also discussed the possibility of taking a couple of years off (after we make enough during the next two years to pay the house off as well as the student loans) My husband is planning on planting an extensive vineyard and orchard here on our property so, needless to say...I am NOT wanting to sell. So, after all of those biggies are payed off we may just hit the open seas on a sailboat. Hey why not?? As my sweet husband put it, "What better way to teach the kids about geography than to travel the world?" I plan on homeschooling them for a couple of years, so I could just as easily "sea school" them. hahahaha! More to come on the the adventures of sailing around the world to come later. Stay tuned!

A Photoshoot: An Artistic Outlet

This post is just like the title puts it, a bit about art. There is no getting around the fact that I am drawn to the arts. I am passionate about many artistic avenues, and many of those avenues act as wonderful artistic outlets for me.

Not only do I enjoy being behind the camera I enjoy being in front of the camera (when I manage to fix my self up, which being a mother seems to be now, only on special occasions). For a brief period of time (I kept it short as I really did not want to pursue modeling if it was going to keep me away from my family, as they are most important to me). I'm too short (5'5) and frankly getting too old to really do much with it...okay, I know 31 isn't old, but in the modeling world..possibly. I look at the fun I have in front of the camera as an artistic outlet. It's fun, freeing, and gives me peace. I'd like to do more of it. The more creative the shot, the better!

During the short period of time I dabbled in the joys of modeling (I'd say it was really no more than two years total) I had the privilege of working with some outstanding photographers. I try to keep up with those photographers I've worked with to keep up to date with their current work. I can see that David's work truly does keep getting better and better. Not only does his work inspire me to get back into modeling, but it also inspires me to pursue photography. Seriously, check out his work! Awesome work, indeed!

The next shots were taken of me during my photo shoot with David back in 2008. It was a fun night time shoot overlooking the city. This particular shoot was very enjoyable. One of my favorite parts about the shoot was that my hubby was there and he was so gracious to help hold up the lights. The hubby is way awesome like that...he was always my escort for the photo shoots (you know, just in case I encountered a shady character which I never did). And having him as my escort worked out perfectly because he got to join me in many shots in various shoots (I will post more pics from other shoots at a later time),

I must say that having spent a bit of time in front of the camera that I now have a much better understanding of the photography process at both ends of the camera..I believe all photographers should model from time to time to truly understand both sides...

Special Delivery: Dark Chocolates and Chia Seeds..Oh Yeah!

Okay, so let's say I purchase an item online and it arrives in the mail..yep I get all giddy and honestly it feels as if it is my birthday or something. Well, this past week I received two items in the mail. One package contained some delicious dark chocolate from XOCAI (www.thechocolateanswer.com).
I came across Rick, an independent distributor for this company on another site (for the life of me I can't recall the name of the site) discussing the benefits of eating dark chocolate. I was delighted that he offered to send me a sampling of the chocolate goodness. I was impressed and I highly recommend this chocolate. Needless to say this sampling did not stick around for long.
I've got my eyes on other brands of dark chocolate (looking for the most affordable and best tasting, yet without losing any important nutrition this special treat could deliver. I am not opposed to enjoying a small square of dark chocolate daily. It makes me happy. ;-) I'm sure I will post my thoughts on those other brands when my taste buds take a spin on those...

I can easily live with free shipping, especially since I love ordering online whenever possible. Being a mother to two kids under the age of five this is so wonderful! The chia seeds are also so fresh! I was pleased that not only would I be getting free shipping, but they were on sale..oh yeah, score! I will definitely be ordering from them again, but my guess is it won't be for awhile because we did just order 12 lbs..but, since I use them so often they will probably go quickly!

The following short video of my daughter are simply words of wisdom from a pint-sized individual..;-) Words to truly live by. My kids mimic me when I say this to them (yes, complete with the cheesy thumbs up and all)...I thought this was pretty precious and had to share! Remember, you can CHOOSE to have a GREAT day! When you wake up in the morning you can choose to have either a bad day or a good day. Rough times are certain..I mean, seriously, this is life and no one lives in a bubble. It's how we choose to look at our day that will determine if life's struggle will weaken us or make us stronger. In my humble opinion, I would say that attitude and our level of optimism would affect our wellness journey as well. If we are happy our bodies may just follow suit.
Optimism wasn't always something that came naturally to me..in fact, just like my wellness journey, it is a daily adventure. In my past (well, honestly, I believe it creeps up on me every now and then still) I suffered from very poor self esteem. I wasn't very optimistic at those times..So, I have made up my mind to instill optimism to my children..When people are optimistic it is contagious, just like a smile is.

I have been reflecting over my wonderful marriage recently to my amazing hubby and decided (after being influenced by Angela from the Oh She Glows Blog) that it would be fun to do a wordless post for some wedding pictures. The husband and I will be going on 7 years of wedded bliss this coming July 6. I am so blessed to have this amazing man in my life. Okay, this doesn't look too "wordless" as of yet..just wait. ;-)

Colorado Recap plus Exercise on Vacation

We had a wonderful time in Keystone, Colorado this past week. It was simply fabulous to return. Rocky and I spent some time out there years ago working, living, playing...oh it was fun. We took time off school to do it. So glad we did. What a refreshing break! Colorado has and always will hold a special place in my heart from that experience! So, getting to return after all these years and bring our little munchkins with us was a sweet treat.

Colorado was just as beautiful as we remembered it to be. Surprisingly, there hasn't been much land development in the Keystone area as we had suspected. There were a few new shops that weren't there before but nothing drastic. That was a pleasant surprise.

We spent four days on the slopes which was a blast! Rocky did his snowboarding...have I mentioned how hot that man looks on a snowboard?..yeppers, it's true. I know, I'm goo-goo eyes for him. (I can't believe I do not have a shot of him in his snowboarding gear!) Shame on me!

The kids and I rented skis. Yep, our two little cherubs skiing on snow...crazy, huh? While we were there I couldn't help but get overwhelmed with joy that our kids have the opportunities to enjoy life in a way such as this ski trip. I missed out on so many fun things as a kid. Kind of sad, but I am thankful that we are allowing our kids to have fun and experience the many joys of life such as hitting the slopes.

All four skiing days were spent at the legendary A-Basin as all the other ski spots had closed for the season. This place is AWESOME! It was great to actually park up to the slopes! The atmosphere was so laid back and fun! All walks of life can be found there. Oh I could go on and on about the fun that was had there....

The kids enjoyed themselves...Aspen didn't really enjoy the skiing part, but loved the ski lifts. Maybe next year Aspen will be more into it..yep, that's right...next year. Hopefully we will make this a yearly family tradition of going to Colorado (that is what Rocky's family did when he was growing up and I always thought that would be nice to do with our little family). Rocky also got a season pass while we were there this year so, well...you can't let a pass go to waste. ;-)

River loved skiing and he was learning quite quickly. They looked so precious in their ski gear..oh my...I had tears swelling up in my eyes at times. What wonderful family memories. I felt so blessed! I am so blessed!

We also met up with some friends, Paul and Alicia, while there. Some great friends who live in Rifle (for the moment). It was great to see them!! One morning we ate breakfast at Edgewater Cafe at Keystone Lodge (where Rocky and I use to wait tables together). I am such a sap...once again the tears started to roll down my face. Yes, during breakfast. It was so nice to be back and visit the restaurant with Rocky again. Those were happy tears, btw. ;-)

We also hit up a couple of the awesome thrift stores in the area. There are two that are located just next to the preschool I used to teach at..I remember spending many lunch times in those shops just browsing (ok, and buying at times). There is just something about the quality of the clothes found at those thrift stores...simply nice sums it up.

One day after hitting up A-Basin we stopped by the famous Nick & Willy's Pizza place. This was always a favorite of ours because you could go and order a yummy pizza and bake it at home. The condo we stayed at this time did not have an oven so we were thrilled to find out that they now can bake a whole pizza there. It was a yummy spinach and sundried tomato-topped pizza.

Sometimes, we just had to rest...and we enjoyed every moment of it. ;-)

Okay....so on to the exercise..while we were there for a week I didn't do my usual exercise. People have said to me that skiing is a form of exercise. I suppose that is true. But, really..I took the chair lift to the top and my skis did the rest as they glided down the mountain. We had a great time for sure, but maybe I wasn't pushing myself hard enough. We will have to find out next year.

So, now we have been home a week and well, I still haven't made it back to my 6:15 am boot camp class. Okay, It was difficult to not be on "Colarado" time and well, the pollen here is killer. I do believe I have been suffering from a sinus infection this week. Excuses, excuses, huh? ;-) I will be starting up again next monday fresh. I am now back on our time zone schedule and I do believe this sinus ickiness is letting up.

Do you bounce back to your usual exercise adventures quickly after a vacation? Are you consistent with your routine throughout your vacation? I am not beating myself up about missing the exercise..life needs to be balanced. Sometimes one must take a break when needed.

Get Moving!!

Most of us are aware of the benefits of participating in exercise on a consistent basis. The possible benefits include, but are not limited to :

weight loss/weight management
improved cardiovascular health
mood lifter
improved sleep
clearer skin
better sex life
increased stamina
helps prevent a variety of illnesses such as high blood pressure, high cholesterol, and type 2 diabetes

These really just touch the surface of the vast benefits of regular exercise.
For me...well, exercise is a great stress reliever. Being a mother to two very active, sometimes strong-willed, children I can stress at times (a terrible thing to do I am aware), but it can happen. I feel better equipped to handle any stressful moment that comes my way after some exercise. I remember this was especially so in college when I would get stressed or anxious about a big test or final...I would find myself taking breaks in order to squeeze in some exercise. It helped clear my mind and calm my nerves.

Life can get pretty hectic. Really, who isn't all too familiar with that? I often hear from people that they just can't squeeze in the time for exercise. They realize the importance of it, but it ends up having to be put on the back burner because...well, it doesn't pay the bills. It makes me think of the fact that we really can do a lot to save money in regards to health care costs, for example. By taking the necessary steps in exercise and diet it is possible to avoid some illnesses that will cost us money in the long run as well as shave years off of our lives.

I have a love for exercise. I, honestly, notice if I've missed some exercise time. I feel stressed, sluggish, and overall more irritable. The world is a much happier place when I exercise. ;-)

*See, I'm squeezing in an arm workout by doing tree pullups...lol.

I say look for ways that you can squeeze in the cardio goodness into your everyday such as gardening, cleaning, parking your car further away from your destination building, taking the stairs instead of elevator, dance, biking or walking to work, even having your children run after you (which is also so fun) gets that heart pumping.

Enjoy the exercise you do and stick with it. Starting and stopping doesn't make me happy because once I start seeing results I want to keep it up.

Now get up and please get that heart pumping!

Gatlinburg and Oh the Guacamole!

We had an amazing time in Gatlinburg with friends for the weekend! Took the kids iceskating for the first time, which was beyond adorable! They did great! Also, I LOVE iceskating with my sweet hubby! He is a blast! Fun fun times! Can't wait for next year to do it all again!

While in Gatlinburg, a friend's boyfriend made some yummy guacamole! Seriously I could bathe in it! All week long whenever I thought about the guacamole my mouth would water..I go nuts for avocados and cilantro! Put em' both together and I go crazy! Yummyyyyyy!!

Here is what it looked like before it was devoured by all!

Ingredients:

2 avocados
1 tomato
half an onion
1 clove garlic, graded
lemon/lime juice, fresh
cilantro
sea salt
a dash or two of nutritional yeast flakes (optional)
a pinch of dulse flakes (optional) (you may want to decrease the salt if you decide to add this)

Directions:

Run the tomato, cilantro and onion in food processor.
Stir in remaining ingredients.
Enjoy with crackers, tortilla chips, raw veggies, or bread.

Recipe: Carrot Salad With a Yummy Twist

Trying out a new recipe for lunch and came up with this...very tasty, very vegan! Sorry my measurements are not exact as I was just playing a bit with ingredients...these are estimates. Enjoy!

5 or 4 carrots
1 bellpepper
dash of sea salt
handful of raisins
small dollop (I love that word) of Vegenaise
dash of Alchemy Spice Company's Mediterranean Blend

Process the carrots and bell pepper in a food processor.
Mix in the Vegenaise.
Sprinkle in the salt and mix.
Sprinkle in the Spice Mix
Put in a bowl and drop in raisins.
Enjoy.
